Thanksgiving Fritter

Thanksgiving has come and gone and there is still a bunch of turkey, mashed potatoes, and corn leftover and you are tired of dried out and reheated leftovers. Let’s have some fun and make some Thanksgiving Fritters!
A fritter is a dish made by deep-frying small portions of batter or dough, often containing vegetables, meat, fruit, or other ingredients. The batter typically consists of flour, eggs, and liquid (such as milk or water), and it may be seasoned with spices or herbs. Fritters can be sweet or savory, and they come in various shapes and sizes.
Common types of fritters include apple fritters, corn fritters, zucchini fritters, and seafood fritters. The ingredients used in fritters can vary based on regional preferences and culinary traditions. After being deep-fried, fritters are usually crispy on the outside and soft on the inside. They are often served as appetizers, snacks, or side dishes.
To make this Thanksgiving Fritter recipe, start by filling a large pot halfway with peanut oil and heat to 350 degrees Fahrenheit. Filling the pot halfway is a safety precaution, filling a pot with too much oil can lead to overflowing oil which will cause a kitchen fire.
In a mixing bowl, combine the potatoes, shredded turkey, corn, and chopped green onion. Use a one ounce or two-ounce ice cream scoop to make similar sized portions then roll each into a ball as best as you can. In the picture above, two-ounce scoops were used.
Set up three containers for dipping. In one container combine egg and water and mix well. The next container will have flour, salt, and pepper mixed in it. The third will be your panko breadcrumbs, if they are very coarse you should smash them a bit to make them a bit finer.
Roll the portioned balls into the flour to coat then dip and coat each in the egg wash. Once coated in egg, roll and coat in the panko breadcrumbs.
Carefully place the Thanksgiving Fritters into the hot oil, do this in batches as to not overcrowd. Fry the fritters for 3-5 minutes each, turning and rotating to get an even cook. Do a test batch on one fritter and cut it open to make sure the center is hot and adjust your cooking time if needed.
Remove the Thanksgiving Fritters from the hot oil and place on a plate lined with paper towel to catch some of the grease.
Serve with gravy and cranberry sauce as dipping sauces.

Ingredients
  

  • 3 cups Mashed Potatoes
  • 1 cup Shredded Turkey
  • 1 cup Seasoned Corn
  • 1/4 cup Chopped Green Onion

Egg Wash

  • 3 Eggs
  • 3 tbsp Water

Seasoned Flour

  • 2 cups Flour
  • 2 tbsp Salt
  • 1 tbsp Black Pepper

Breadcrumb Crust

  • 2 cups Panko Bread Crumbs

Deep Frying Oil

  • Peanut Oil for Frying

Instructions
 

  • Fill a large pot halfway full with peanut oil and heat to 350 degrees.
  • In a mixing bowl combine the potatoes, turkey, corn, and green onion. Use a 1oz or 2oz ice cream scoop to make similar sized portions then roll each portion into a ball as best as you can.
  • Set up three dipping containers, one with the egg and water mixture, one with the flour, salt, and pepper, and one with the bread crumbs.
  • Roll the portioned potato, turkey, and corn portions into the flour to coat.
  • Dip the fritters into the egg wash being sure to coat entirely.
  • Roll the fritters into the bread crumbs, coating evenly.
  • Fry each fritter for 3-5 minutes, turning and rotating to get an even cook. Only do a small batch at a time.
  • Do a test cook on one fritter to make sure the center is hot then adjust your cooking time.
  • Remove and put on a plate lined with paper towel to catch the oil.
