Italian Ice

Only real ingredients are added into this Italian ice. Lemon juice, lemon rind, lemon extract, sugar, ice, and mint. Light and refreshing on a hot summer day.

Ingredients
  

  • 3 cups Water
  • 1/2 cup Sugar
  • 1 pinch Salt
  • 1 cup Fresh Lemon Juice
  • Finely Grated Rind of One Lemon
  • 1 tsp Lemon Extract
  • 4-6 Small Mint Leaves

Instructions
 

  • In a small sauce pan, heat two cups of water until it simmers. Dissolve the sugar in the hot water and add the pinch of salt. Add the rest of the water to the mixture then refrigerate until cool.
  • Add lemon juice, lemon rind, and lemon extract to the cooled water and place in the freezer.
  • Mix with a fork every half an hour until the mixture is frozen but a still slightly slushy, approximately two hours.
  • Portion into small containers and add mint leaf to each portion.
