Kefir Biscuits

Kefir Biscuits

Replace buttermilk with kefir to make homemade kefir biscuits in under 20 minutes.

Ingredients
  

  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Sugar
  • 1 cup Whole Milk Kefir I used mango, but plain or a different flavor could be good too!
  • 1/2 cup Salted Butter melted 1/2c=whole stick of butter
  • 2-3 tbsp Salted Butter melted to brush over biscuits
  • Jam or Jelly optional but delicious

Instructions
 

  • Preheat your oven to 450 degrees.
  • Mix all of the dry ingredients together in a mixing bowl. Set aside.
  • Melt a stick of butter over low heat.
  • In a separate mixing bowl, add kefir.
  • Once butter is melted, add it to the kefir. It will form solids due to the difference in temperatures.
  • Add dry ingredients to the wet ingredients and mix together to form a dough. You can use a mixer but by hand is just as easy.
  • On a silpat or parchment paper lined baking sheet, portion and form 1/4 cup(doesn't have to be exact) sized biscuits. It usually yields 8-10 biscuits depending on your portions.
  • Place your biscuits in the oven, center rack or higher usually works best.
  • Melt the rest of the butter over low heat.
  • After 11 minutes, remove the biscuits from the oven and butter the tops.
  • Place the kefir biscuits back in the oven and bake for another 2 minutes.
  • Remove the biscuits from the oven.
  • Either cut the biscuits in half and butter or butter the top of the ones that you will be eating.
  • Optional: Serve with jam or jelly but make sure you try a bite of one without first!
