Summer grilling can be such a great experience, not only for the ones that love grilling but also for those that enjoy the many foods that come off the grill with that charred smoky flavor.
Grilling fruit can bring out new flavor profiles that don’t exist in the raw form. The sugar in fruit reacts with the heat of the grill causing the sugars to caramelize. After grilling just about any fruit you can think of, there a few that really stood out. The one that stands atop the mountain of flavor is the peach.
Cobblers, crumbles, Brown Betty’s, crisps; they are all commonly called the wrong thing but unless you really know your desserts and the subtle differences, it doesn’t matter much because they are incredibly satisfying to eat. This recipe is loosely based on a Brown Betty. Using fresh fruit and sweet buttery crumbs.
To get started, fire up your grill. Propane is easier but charcoal is always tastier. If you are using charcoal, use a charcoal chimney to light your chimney. Lighter fluid and matchlight can be highly toxic if not used properly, and most people don’t. Once your coals are white hot pour them out into one side of your grill. If using propane turn one half of your grill all the way up while keeping the other side off.
Grill your peach halves on the flat side until they are browned and slightly charred. The ripeness of your peaches will determine the final texture after being cooked. If you prefer a softer bite use very ripe peaches, if you prefer a bit more texture use a peach that is just ripe. Remove the peaches from the grill and slice the peaches into thin slices. Place the sliced peaches into a mixing bowl.
In a separate bowl, add butter, brown sugar, cinnamon, clove, flour, oats, and pecans. Work the mixture with your hands to get the butter incorporated into the rest of the ingredients. Take half of this mixture and add it to the bowl with the sliced peaches and coat the peaches.
Butter a cast iron skillet and place the coated sliced peaches into it. Spread the peaches out evenly then top of the peaches with the rest of the sweet crumb mixture.
Place the skillet on the grill over medium heat. If you are using a charcoal grill move it to the side of the grill without the coals underneath it. Close the lid of the grill (vents open with a charcoal grill) and bake for 20-30 minutes.
Your Grilled Peach Brown Betty should be done, the top should be crispy and the peaches should be soft but still have a good bite to them. Let it rest for 10-15 minutes if you like having a tongue and roof of your mouth not feeling like leather for 3 days.
It would be criminal to not serve this dish with ice cream and a bit of fresh mint, and rest assured that someone will call the cops if you deprive them of this combination.

Grilled Peach Brown Betty

Ingredients
  

  • 12 Peaches Halved and Pitted
  • 2 Sticks of Butter
  • 1 cups Brown Sugar
  • 2 tsp Cinnamon
  • 1/2 tsp Clove
  • 3/4 cup Flour
  • 1 cup Oats
  • 1 cup Chopped Pecans
  • 8 Mint Leaves
  • Vanilla Ice Cream

Instructions
 

  • Grill the peaches until the are browned and lightly charred. Slice the peaches and place into a mixing bowl.
  • In a separate mixing bowl, add butter, sugar, cinnamon, clove, flour, oats, and pecans. Work the mixture with your hands to get the butter incorporated into the rest of the ingredients.
  • Place half of the topping mixture into the bowl with the peaches. Coat the peaches with the mixture.
  • Butter a cast iron skillet and place the peaches into it. Top the peaches with the remainder of the topping.
  • Place the skillet on the grill over medium low heat and cook for about twenty minutes with the lid closed.
  • Tip: If your grill is large enough, turn one side up to high and leave half of the grill off. Place the skillet on the side that is off and close the lid, the heat from the opposite side will bake the Brown Betty.
  • Serve with Vanilla Ice Cream and Mint.
