One day I was planning to make buttermilk biscuits. I added each ingredient that I needed to the mixing bowls, melted the butter, then headed to the fridge to get the buttermilk. For some reason, it didn’t occur to me to make sure there was buttermilk BEFORE making buttermilk biscuits. The buttermilk wasn’t in the fridge, we probably used it on the last batch of pancakes days earlier. However, there was a mango kefir. Kefir could work right? Maybe?
For those of you new to kefir (my hand is raised too).
Kefir is a fermented dairy product made from milk and kefir grains, which are a combination of bacteria and yeast. It has a tangy flavor and a creamy texture, similar to drinkable yogurt. Kefir is rich in probiotics, which are beneficial for gut health, and it contains vitamins, minerals, and proteins. It can be consumed on its own, added to smoothies, or used in recipes like salad dressings or baked goods. There are also non-dairy versions made with plant-based milks.
This may be in your fridge if your partner takes extremely good care of themselves, or if you have had issues with lactose digestion. Again, both of my hands are raised.
So, I decided to go forward with kefir biscuits. My kids are very critical of everything we make, so they will give their honest opinion if something isn’t up to par. They both ate two and loved them.
Since the test subjects lived to tell, I tried one too. They were really good! The mango was hardly detectable but there was a trace of it in, and it had a hint of mango scent too.
So whether in a pinch, not a fan buttermilk, or just looking to try something new; give kefir biscuits a try!
Kefir Biscuits
Ingredients
- 2 cups All-Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Sugar
- 1 cup Whole Milk Kefir I used mango, but plain or a different flavor could be good too!
- 1/2 cup Salted Butter melted 1/2c=whole stick of butter
- 2-3 tbsp Salted Butter melted to brush over biscuits
- Jam or Jelly optional but delicious
Instructions
- Preheat your oven to 450 degrees.
- Mix all of the dry ingredients together in a mixing bowl. Set aside.
- Melt a stick of butter over low heat.
- In a separate mixing bowl, add kefir.
- Once butter is melted, add it to the kefir. It will form solids due to the difference in temperatures.
- Add dry ingredients to the wet ingredients and mix together to form a dough. You can use a mixer but by hand is just as easy.
- On a silpat or parchment paper lined baking sheet, portion and form 1/4 cup(doesn't have to be exact) sized biscuits. It usually yields 8-10 biscuits depending on your portions.
- Place your biscuits in the oven, center rack or higher usually works best.
- Melt the rest of the butter over low heat.
- After 11 minutes, remove the biscuits from the oven and butter the tops.
- Place the kefir biscuits back in the oven and bake for another 2 minutes.
- Remove the biscuits from the oven.
- Either cut the biscuits in half and butter or butter the top of the ones that you will be eating.
- Optional: Serve with jam or jelly but make sure you try a bite of one without first!
